New Circa Resort & Casino Launches in Las Vegas

Circa Resort & Casino, Downtown Las Vegas’ first resort-casino built from the ground up in four decades, is now open. The 1.25 million square-foot, adults-only property pays homage to Vegas’ Golden Era through vintage design, old-school hospitality and nods to the city’s history while introducing high-tech advancements and cutting-edge amenities.

Conceived by developer and CEO Derek Stevens, Circa’s opening marks a series of firsts and achievements for Las Vegas:

One of the most ambitious projects in Downtown Las Vegas’ 115-year history and the area’s first resort-casino built from the ground up in four decades.
World’s largest sportsbook with a 78-million-pixel screen viewable to up to 1,000 people
    Vegas’ first adults-only resort
Country’s largest destination pool experience for sports fans, open 365 days a year with a 14-million-pixel screen
New-to-Vegas food & beverage concepts by renowned chefs and restaurateurs from across the country
Nevada’s longest indoor bar spanning 165 feet
First Las Vegas resort with a fully integrated rideshare hub

Hours before the official opening, Stevens hosted an intimate black-tie gala at the property. Las Vegas founding families and current casino operators gathered for the first roll of the dice on Circa’s casino floor, including Ryan Growney, General Manager of South Point Hotel & Casino; Jonathan Jossel, CEO of The Plaza Las Vegas; Scott Sibella, President of Resorts World Las Vegas; Andy Abboud, Senior Vice President of Government Relations and Community Development for the Venetian Resort Hotel Casino and the Las Vegas Sands Corporation; Chris Latil, Senior Vice President and General Manager of Golden Nugget Hotel & Casino; Terry Caudill, owner of TLC Casino Enterprises, Inc.; Mike Nolan, General Manager and COO of El Cortez Hotel and Casino; and Brendan Gaughan, grandson of Jackie Gaughan.

“For the past five years, the Circa team and our partners have been devoted to introducing a resort and casino experience that brings something totally new to Vegas, and in some cases, the country,” said Stevens. “I will be the first to admit that 2020 has not been easy, but this talented group persevered and has delivered on this vision, 8 weeks early. I’m incredibly proud to be putting 1,500 people to work and that our doors are finally open for all to visit Circa.”

    A Glimpse into Circa:

World’s Largest Sportsbook – Circa Sports is the resort’s centerpiece, boasting a 78-million-pixel high-definition screen capable of playing up to 19 games at once. The three-story, stadium-style venue is helmed by the country’s top betting experts delivering Vegas’ most diverse wagering menu. With a viewing capacity of up to 1,000, fans can reserve plush accommodations such as reclining seats or booths for large groups; all are equipped with power outlets, Wi-Fi and tables. VSiN, The Sports Betting Network (VSiN), has an on-site studio within the sportsbook, giving bettors in-depth expert analysis daily from broadcasters, athletes and industry professionals. A Circa Sports satellite location is positioned next to the entrance of Garage Mahal, offering one of the most accessible betting locations in Las Vegas. When it’s time for a bite, guests can have food from a selection of Circa’s restaurants delivered directly to their seat.

Stadium Swim – The country’s largest pool destination for sports lovers brings the party 365 days a year. Featuring six temperature-controlled pools, two swim-up bars and a 143 x 40 foot, 14-million-megapixel LED screen, the pool amphitheater plays the day’s hottest games and televised events. Guests can enjoy live music from DJs and other special guests in one of 30 cabanas, or a super cabana hosting up to 50. During colder weather, Stadium Swim’s pools will be heated to up to 104 degrees for an après-ski style experience. Designed with one of the country’s most high-tech cleaning systems, Stadium Swim features advanced Ultraviolet Light sanitation, the city’s fastest water-recirculation patterns, and sophisticated and real-time chemical monitoring controllers that destroy pathogens, bacteria, viruses, organic and inorganic contaminants, while greatly reducing chlorine use.

Vegas Vickie Returns – Tall, blonde and kickin’ – the famous neon sign Vegas Vickie has found her new home at Circa as a must-see art installation in Circa’s hotel lobby. Originally appearing in 1980, she became a landmark on the Fremont Street Experience. With the goal of uniting old and new Vegas in never-before-seen ways, Stevens acquired the sign in 2016 with the intent to give Vickie a new home at Circa. After undergoing a complete refurbishment by YESCO and designer Adolfo Gonzalez - including replacing the mechanism in her knee - the 25 ft. Vegas icon has made a grand return to her rightful place in Downtown Las Vegas and is kicking yet again.

    Original Restaurant Concepts

Barry’s Downtown Prime –Glitz, glam and throwback vibes define Circa’s steakhouse – Barry’s Downtown Prime – from Vegas’ own Chef Barry S. Dakake and his team at Make It Happen Hospitality. With a menu comprising the finest steaks and seafood, an extensive list of tableside preparations and creative cocktails, Barry’s transports patrons back to the classic cool of the 50s and 60s. The restaurant features dazzling art by more than 40 local artists, eight distinct dining rooms and 3,200 square feet of private and semi-private areas.

Saginaw’s Delicatessen – Legendary Michigan restaurateur Paul Saginaw has opened his first concept outside of Detroit with Saginaw’s Delicatessen. Renowned for Ann Arbor’s staple Zingerman’s Deli, Saginaw’s new concept introduces his undeniable charm to Downtown Las Vegas. Saginaw’s menu consists of his legendary sandwiches - so big two hands are needed to eat them - matzo ball soup, onion rings, salads, latkes, chopped liver and breakfast specialties. Saginaw’s is the new home to Golden Gate’s beloved Las Vegas shrimp cocktail, which will be sold at its original price of 99 cents from 3 – 5 a.m. daily.

8 East – A Pan-Asian restaurant from Chef Dan Coughlin of Downtown Las Vegas’ Le Thai, 8 East brings a hip atmosphere and communal dining to Circa’s casino floor. Spanning cuisines inspired by Coughlin’s youth and travels throughout Asia, 8 East offers small plates and shareable dishes with Chinese, Japanese, Vietnamese, Thai and Korean influences. Guests will not want to miss its signature dumplings, skewers, noodles and more, paired with hard-to-find Japanese and Indian whiskies, and unique libations.

Victory Burger & Wings Co. – Created by the founding family of Detroit’s 103-year-old American Coney Island, Victory Burger & Wings Co. is Circa’s all-star sports bar. Overseen by siblings Grace Keros and Chris Sotiropoulos, the restaurant features massive burgers made with a proprietary blend of Angus beef, short ribs and brisket; hearty wings; crispy fries; house made sauces; onion rings; and nostalgic milkshakes made with Captain Crunch Berries, Chocolate Cocoa Puffs and Cinnamon Toast Crunch. The open concept overlooks Circa’s sportsbook and its massive screen, so diners can hear the crowd roar during big games. Victory Burger features an on-site broadcast studio, hosting top broadcasters and podcasts from across the country.

Project BBQ – Offering a Southern festival of gourmet smoked meats, Project BBQ at Circa is Fremont Street Experience’s only permanent food truck and its first Carolina BBQ joint. Chef Rex Bernales serves mouth-watering pulled brisket, pork and chicken - including tacos and empanadas - and ups the ante with his two-foot long $100 Sandwich and Hogstravaganza platter, featuring a full barbecued pig delivered with signature Vegas fan fair. Situated on Circa’s exterior, Project BBQ spills out onto the Fremont Street Experience with a built-in “backyard” for communal gathering. Guests can dine as they enjoy spectacular light shows from Viva Vision overhead and live music from surrounding concert stages.

    Bars and Lounges

Vegas Vickie’s – A prime place to catch Vegas Vickie in action, the cowgirl’s namesake cocktail lounge is an elevated lobby bar experience. The Art Deco space features a menu of classic cocktails that pay tribute to Vegas’ past, including a drink named after Vegas Vickie herself.

MEGA BAR – Spanning an impressive 165 ft. with 120 beers on tap, MEGABAR is Nevada’s longest indoor bar. Inspired by its sister concept, LONGBAR at the D Las Vegas, guests can catch every second of game day on one of its 46 double-stacked TVs or join the gaming action at 53 bar-top table games – all while talented flair bartenders send bottles flying through the air.

Circa Bar – Located directly on Fremont Street Experience beneath the world-famous Viva Vision light show, Circa Bar is home to both dancing and flair bartenders who serve up 24 frozen cocktail flavors. Guests also can purchase souvenir glasses designed to look like Circa’s tower and Vegas Vickie.

Overhang Bar – Positioned above Circa’s multi-level sportsbook and open 24/7, Overhang Bar gives guests a bird’s eye view of the book’s giant screen. Drawing inspiration from the former Detroit Tigers stadium’s private overhang section, the space includes a ledge lined with poker machines.

Jack Pots – Created by renowned restaurateur Paul Saginaw and acclaimed coffee roaster Steve Mangigian, Jack Pots is Circa’s 24-hour coffee shop. The space serves Michigan’s own Zingerman’s coffee and sells one of the two custom coffee blends created exclusively for Circa. Guests can choose from a variety of delicious coffee drinks, as well as freshly made breakfast items, sandwiches and salads.

Casino – Spanningtwo stories and 8,002 square feet of gaming space, Circa’s high-energy casino houses 1,350 top-of-the line slots, with Downtown Las Vegas’ famous Dancing Dealers presiding over 49 table games. Guests can travel back in time in its intimate, high-limit gaming lounges featuring Art Deco design paired with gold and deep red accents.

Chris Ihle Studio – Brick artist Chris Ihle has debuted his first working studio on Circa’s casino floor. Using toy bricks to create life-size works of people, animals and more, Ihle’s studio includes a whimsical interpretation of CEO Derek Stevens amongst other notable figures. For the ultimate gift, visitors can commission Ihle to create a statue of their loved ones or pets.

Retail – Designed by Marshall Retail Group, guests can purchase Circa essentials at retail venues, Circa Collections and Fuel, offering guests a selection of apparel, souvenirs, indulgent treats and more.

Garage Mahal – With eight stories and 982 parking spaces, Garage Mahal is Circa’s transportation hub and Vegas’ first fully integrated structure built with ridesharing in mind. With a focus on safety and cleanliness, Garage Mahal is the lightest and brightest garage in the city with extensive LED lighting, and also features broadband Wi-Fi, state-of-the-art surveillance and an air-conditioned bridge connecting to Circa’s second-floor casino. Upon arrival, guests are immersed in three Vegas-inspired murals by Eric Vozolla and a 22-ft chandelier by Egads illuminated with Circa’s tagline “Time of Your Life.”

The Main Event will begin for international players on Sunday, Nov. 29 and domestically on Sunday, Dec. 13.

Each “bracket” will pay out prize money to tournament entrants independently. The final table will be a world’s first, as an ultimate heads-up duel for the World Championship, where $1 million in prize money will be on the line courtesy of Caesars Entertainment, Inc. and GGPoker. The Main Event will be held consistent to the traditional “freeze-out” standards of the Main Event, offering only single entry, as well as the longest levels and deepest stacks ever offered on the online platform.

All in-person tournaments, domestic and international, will be subject to special COVID rules and procedures, the details of which will be published at a later date and will require players to undergo a required health screening prior to live participation. All participants must agree to abide by all applicable rules.

U.S. residents will be able to play the Main Event on the platform in either New Jersey or Nevada beginning on Sunday, Dec. 13. The $10,000 event is expected to take two full days to reach the final table, with play being suspended for an overnight break after approximately 12 hours of action. The tournament will be paused when play hits the final table, with the final nine players traveling to Las Vegas for the TV taping and culmination of the tournament to take place at the Rio All-Suite Hotel & Casino, subject to applicable regulatory approval.

    Day 1 – Sunday, Dec. 13, 2020

    Day 2 – Monday, Dec. 14, 2020, Play down to 9 players

After more than seven months in lockdown, The Gazillionaire emerged from his million-dollar bunker beneath Caesars Palace yesterday to host a history-making performance of ABSINTHEby Spiegelworld, the first major production show to reopen in Las Vegas since the city’s stage lights were dimmed in March. From the moment the Green Fairy emerged from her bottle at the top of the show to the on-your-feet finale, last night’s sold-out performance of ABSINTHE was alive with sidesplitting laughter and audible gasps from the audience. Thrilling, sexy, hilarious and ridiculous, ABSINTHE brought laughter back to The Strip and delivered what showgoers have waited many months for: a brief escape from reality.

Never one to shy from his own spotlight, The Gazillionaire and his hapless assistant Penny Pibbets made their long-awaited return as the show’s emcee duo, both wearing outlandish safety helmets; Pibbets’ clearly a DIY project gone wrong and The Gazillionaire’s, a space-age apparatus that is destined to become the last word in face covering haute couture. Even Gaz’s cast of sexy circus people got in on the safety action with thoughtfully-reworked routines and choreography to meet their new spatial requirements, all while wearing beautiful, extravagant masks and delivering the thrills and intimate energy the show is celebrated for – leave it to ABSINTHE to make safety sexy!

Between introducing the evening’s acts – including many fan favorites and some new to the show – The Gazillionaire took time to do what he loves most: heckling showgoers, who were seated at cabaret tables 25 feet or more from the performers’ main stage.

Upon arrival at ABSINTHE’s spiegeltent, ticketholders each participated in a brief no-contact temperature scan and verbal health screening before enjoying pre-show drinks in the Green Fairy Garden, the venue’s sprawling outdoor foyer, which had been overgrown by a field of giant illuminated mushrooms. “While I was in lockdown, some idiot named Penny watered the ABSINTHE Electric Oak…I guess she didn’t get the memo that electric-powered trees don’t need water.” said The Gazillionaire. "So, while its leaves are recovering, I told her to do something about it…I don’t know what I expected from someone who thinks ‘The Smurfs 2’ is a cinematic masterpiece, but here we are.” The Shrooms were commissioned by Pibbets from renowned Sydney-based light sculpture artists, amigo & amigo.

Show producer Spiegelworld has implemented a number of enhanced health and safety protocols which meet or exceed guidelines and requirements put forth by local government, working agencies and Nevada Gaming Control Board, including but not limited to:
    • Reduced audience capacity from 660 to 153 patrons seated in parties of two to five at sufficiently distanced cabaret tables spaced 25 feet away from the performers’ main stage.
    • Upon arrival, guests are asked to participate in a brief verbal health screening before being ushered to their color-coded pod in the outdoor courtyard. Audiences are brought in and out of the venue by color section in an effort to minimize congestion at entrances and exits.
    • Masks are required to be worn by all artists, staff, and patrons. Guests may briefly remove their mask while actively drinking but are otherwise asked to keep their face covering on.
    • A cashless, QR code-based cocktail service eliminates lines at the bar.
    • ABSINTHE’s world-famous spiegeltent, including seating areas and all frequently touched surfaces, is sanitized before and after every performance.
    • “This has been the longest seven months of our lives, but now is the time for the show to go on,” said Ross Mollison, Impresario Extraordinaire of Spiegelworld, in a prepared statement. “I am incredibly proud of our entire Spiegelworld family for their hard work that’s gotten us to this point. The return of ABSINTHE tonight is a small but significant step forward for our wonderful city and the entire entertainment community that I know will come back stronger than ever. Our goal is to open safely and to stay open, and we’re confident that the public will do their part in helping us do so. Stay tuned for announcements about the return of our shows OPIUM and ATOMIC SALOON SHOW coming very soon!”
“The #1 Greatest Show in Las Vegas History” as ranked by Las Vegas Weekly, ABSINTHE performs Wednesday through Sunday at 7 p.m. and 9:30 p.m. in its spiegeltent at the foot of Caesars Palace. For tickets and more information, visit

Cirque du Soleil informed the cast and crew of Zumanity about its permanent closure today.

Zumanity was a groundbreaking departure for Cirque du Soleil when it opened in September of 2003,” said Daniel Lamarre, President and CEO of Cirque du Soleil Entertainment Group. “We are forever grateful to the extraordinarily talented cast, crew and staff who helped make Zumanity an unforgettable experience for more than 7.25 million guests.”

After wowing audiences with more than 7,700 shows, the last performance of Zumanity took place on March 14, 2020 before it was shut down due to the COVID-19 pandemic. Guests holding tickets for any future performances will be refunded at the original point of purchase. For more information, guests may contact [email protected].

George Kliavkoff, President of Entertainment & Sports for MGM Resorts International, said, “Zumanity at New York-New York had a terrific run over the last 17 years and our partnership with Cirque du Soleil remains strong moving forward. We’re grateful to the cast, crew and team at Cirque for having created something very special. We look forward to sharing plans for new entertainment programming at the New York-New York Theater in the months ahead.”

Cirque du Soleil and MGM Resorts International have solidified their commitment to the partnership and the four shows remaining in the Cirque du Soleil portfolio. Contract extensions for “O” at Bellagio, The Beatles LOVE at The Mirage, KÀ at MGM Grand and Michael Jackson ONE at Mandalay Bay have been signed. Additionally, Treasure Island and Cirque du Soleil have recommitted to Mystère with a contract extension. With these extensions, Cirque du Soleil shows are guaranteed to entertain audiences well into the future.

The timing of the shows’ reopening will be dictated first by the safety of guests and employees in compliance with the guidelines set forth by the Governor and other government agencies; and second, by the ability to operate the shows profitably.

More than 70 million visitors have experienced Cirque du Soleil shows in Las Vegas since Mystère opened in 1993 and Cirque du Soleil looks forward to continuing that legacy when the shows return safely to their theaters.

Park MGM Closes Its Hotel Mondays Through Thursdays

MGM Resorts International CEO Bill Hornbuckle already said that some of the company’s resorts may start closing mid-week as tourist demand remains low. Now comes word that the Park MGM will only be open from noon on Thursday to noon on Monday. While the hotel closes, the casino, restaurants, and other amenities remain open. The hotel closes for weekday stays starting November 9.

Park MGM reopened as a smoke-free resort on September 30, bringing back some restaurants inside Eataly, as well as Bavette’s Steakhouse & Bar, Primrose, and The Crack Shack, which reopened August 8 at the front of the resort. NoMad Hotel reopened inside the resort, along with NoMad Bar. Both will continue operating daily.

MGM Resorts officials say that the Park MGM is the only property that has not shown a profit since reopening, and it will take time for tourism to return to full strength. Most conventions, a lifeline for tourism traffic and hotel stays, have not returned to the city.

“While we do not currently expect the mid-week closures to remain in effect past December, we will continue evaluating business levels to determine how long Park MGM’s mid-week hotel closures remain in effect,” says Anton Nikodemus, president of casino marketing and chief operating officer of casino marketing at MGM Resorts, in a statement.

Mid-week hotel occupancy in September reached 39 percent, down 47 percent from the same month in 2019, according to the Las Vegas Convention and Visitors Authority. Weekend occupancy was at 66 percent, down 30 percent from September 2019.

Park MGM joins Encore Las Vegas, which decided to reduce its hours starting on Monday, October 19. The resort closes at 2 p.m. on Mondays and reopens at 2 p.m. on Thursdays. The reduced hours also affect the restaurants and bars at Encore, including Jardin, the Asian eatery Wazuzu, the new Mexican restaurant Elio, and the Italian restaurant Sinatra, which will now only be open Thursday through Sunday. Customers can check into the resort at 2 p.m. on Thursdays and must depart by noon on Mondays.

Vegan/Vegetarian Menu: Bugsy & Meyer’s has also introduced a new seasonal prix fixe vegan and vegetarian menu.
    • Starter options include a choice of warm heirloom beets and pumpkin salad; or young coconut, ceviche style with red bell pepper, cherry tomatoes, onions and topped with coconut foam.
    • For the entrée, guests can choose between forest mushroom cannelloni made with heirloom tomato essence, petite arugula and aged balsamic; or roasted cauliflower steak served with root vegetables mousseline, fall vegetables and fine herbs oil.
    • For dessert, guests can select fresh berries or sorbet.
    • Unique Cocktail Options:
    • With the recent reopening of the main bar and The Count Room, Bugsy & Meyer's has added a few spice-tacular fall cocktails to its already impressive cocktail menu, as well as a roaming, interactive Old Fashioned beverage cart.

Fall cocktails: All-new contemporary and prohibition cocktails include:
    • Into the Mystic: a smoked cocktail made with WhistlePig "Piggyback" six-year straight rye whiskey, Lustau Palo Cortado Sherry, Montenegro Select Amaro, Luxardo Amaretto di Saschira, and Angostura Bitters
    • Apple Brandy Crusta made with Pere Magloire VSOP Calvados, Cointreau, lemon juice, Demerara syrup, Angostura bitters and a sugar rim
    • Leather Antique made with Smoke Wagon Straight Bourbon Whiskey, sweet Vermouth, Lustau Palo Cortado Sherry, Amaro Montenegro Liqueur and finished with an orange
From menu to design, and atmosphere, Bugsy & Meyer’s takes notes from the past and adds fresh and elevated twists. Guests are transported from the moment they arrive, as they enter through the bakery façade, and pass the kitchen and dry aged meat cooler, giving the illusion of discreetly entering through the back as many did decades ago. From there, there are six unique experiences for guests in the space—the patio and lounge, the centerpiece bar, private dining in one of three private dining rooms perfect for groups, the raw bar, the ornate dining room and the hidden speakeasy —The Count Room.

Bugsy & Meyer’s follows Caesars Entertainment’s previously announced enhanced health and safety protocols, which build on existing plans and practices. Caesars management is focused on the well-being of team members, guests and the community, and is working to create an environment with enhanced standards of sanitization and physical distancing practices. Examples of these protocols in the restaurant include, but are not limited to, the following:

    Appropriate social distancing with tables 6 ft. apart;
    Restaurant occupancy reduced to 50% of fire code capacity in accordance with government directives;
    Place settings have been removed and will be brought throughout the meal;
    Team members are required to wear masks;
Hand sanitizer will be provided at multiple points.

The Cosmopolitan of Las Vegas Debuts Exclusive Dining Experience

The Cosmopolitan of Las Vegas is thrilled to announce the launch of the Chef’s Table at Scarpetta, an immersive, private dining experience centered in timeless Italian tradition. Beginning Monday, Oct. 19, parties of up to six guests can make reservations for the exclusive culinary affair online for $200 per person.

Nestled between a spectacular display of animated fountains and an unobstructed view of Scarpetta’s bustling kitchen, the private seating area invites guests into the warmth of an Italian family gathering around the Chef’s Table. Led by Scarpetta’s Chef de Cuisine, and Las Vegas native, Michael Vitangeli, tales and taste intertwine to create an unparalleled culinary showcase.

“My passion for cooking began as early as five years old, when my grandmother taught me to recreate her authentic Italian dishes and techniques in the kitchen,” said Scarpetta Chef de Cuisine, Michael Vitangeli. “The new Chef’s Table experience allows me the opportunity to welcome guests into my Italian kitchen and share the delicious and savory comfort of my family’s longstanding recipes. I believe food is meant to be approachable and comforting, and I look forward to inviting guests to gather around the Chef’s Table and join the Scarpetta family.”

For the Chef’s Table experience, Vitangeli indulges in age-old recipes helmed by his lineage with six courses presented alongside expertly selected wine pairings throughout the evening. Upon arrival, guests are warmly greeted by General Manager Mario Disi and escorted to the remarkable marble-clad Scarpetta bar where they will toast with an aperitif cocktail, specially crafted to commemorate the evening. Guests are then accompanied to the private, familial dining room and introduced to Chef Vitangeli where a beautiful six-course dance of storytelling and tableside presentation featuring hand-pulled pastas, fresh antipasti and burrata is enjoyed amongst friends and family. Menu highlights include Homemade Burratta made with prosciutto, roasted bell peppers, cracked pepper, fresh Crisini and super Tuscan olive oil; Scampi comprised of homemade pasta, smothered jumbo prawns, heirloom tomatoes, capers, Vermentino wine, roasted garlic and Salmoriglio; Porchetta, a roasted pork belly with apple mostarda and horseradish crema; with Homemade Canoli and Torta della Nona for dessert.

Scarpetta, located on the third level of The Cosmopolitan’s Boulevard Tower, derives its name from the gesture of soaking a boot-shaped piece of bread in the remaining sauce left in the pot of the home kitchen. All facets of the world-renown Italian restaurant are ingrained in familiar gesture and indulgent pleasure, down to the very last taste. Chef Vitangeli’s understated, yet elegant, approach to Italian cuisine is expertly crafted with responsibly sourced ingredients and carefully prepared for a classic and approachable dining experience.

New Restaurant, Amalfi by Bobby Flay, To Debut at Caesars Palace

After 16 years of notable success with Mesa Grill at Caesars Palace, award-winning chef Bobby Flay plans to introduce a new restaurant concept, Amalfi by Bobby Flay, following final service on Saturday, Nov. 14. Inspired by Flay’s extensive travels to Italy and the Amalfi Coast, this will be his first Italian restaurant concept. With an anticipated late spring 2021 opening, Amalfi will transport guests to the Mediterranean with its enchanting blend of coastal ease and fresh, bright flavors.

“We have all learned during this unfortunate pandemic, and one of the things I’ve held closely to, is to focus on the things you’re most passionate about—for me, right now, that passion is Italian cuisine, especially from the Amalfi coast,” said Flay. “Food in Amalfi is known for two things, the fish that comes out of the water and pasta. I want to bring the best of the region to Caesars Palace, and every dish that is served at the all-new Amalfi will evoke the flavors and feel of Italy. Mesa Grill has meant so much to me over these last 16 years, but it’s important to evolve and stay ahead of the curve, especially in Las Vegas. The team and I are excited for this next chapter, and we know our loyal guests will love the new experience we have planned.”

“We are proud of our longstanding relationship with Bobby Flay and the success of Mesa Grill at our resort, creating 16 years of wonderful memories for our guests,” said Caesars Entertainment Regional President Gary Selesner. “Bobby has an unparalleled enthusiasm for travel and expressing his experiences on the plate. We are thrilled to partner on this next chapter with Amalfi by Bobby Flay, bringing a vibrant Mediterranean seafood dining destination to the heart of the Strip at Caesars Palace.”

The legendary beauty of southern Italy’s Amalfi Coast has inspired artists, writers and musicians for centuries. Rugged cliffs, crashing blue waves filled with the freshest sea life, vibrant greenery, fresh produce in abundance and an ease of life are pillars of the region. These elements will all be seen, smelled, felt and, most importantly, tasted at Flay’s new Amalfi restaurant.

Flay’s interest in Italian cuisine runs deep, with especial admiration for its simplistic elegance and festive eating, which will be showcased through Amalfi’s menu, ranging from light antipasti, to a large menu of rich pastas, to whole fresh fish, with a few traditional desserts with a twist. Antipasti selections will include crispy soft-shell crab salad with blood oranges and green olives; soft scrambled eggs with porcini mushrooms and triple crema cheese; and squash blossoms with corn, basil and ricotta. True to the Italian heart, Amalfi will feature a vast number of pastas—both house made fresh and dry—including green tomato risotto with sea scallops and Osetra caviar; lobster pasta with yellow tomatoes, basil and Calabrian chiles; spaghetti with sea urchin and tomato; and paccheri with scorpion fish, cherry tomatoes and green garlic.

A focal point of Amalfi will be a fish and seafood display, inspired by authentic Italian markets and staffed by a knowledgeable fishmonger, who will be available to answer any guests’ questions—from where the fish is from, when it arrived in Las Vegas and more. Guests may order a whole fish, prepared grilled over charcoal or roasted al forno, served with lemon, capers and salsa verde. To finish on a sweet note, dessert staples will include pistachio olive oil cake, pistachio butter, pistachio gelato, pistachio brittle and Amarena cherry sauce; and a dark chocolate tiramisu.

Designed by Olivia Jane Design & Interiors, Amalfi features a timeless design with a natural palate and touches of greenery throughout, blended with elements like organic fabrics, stone, and wood materials, lending depth and a sense of history to the space. The entrance of the restaurant will serve as a gateway, enveloping guests’ senses from the moment they arrive. Amalfi will offer four unique yet cohesive spaces—the bar and lounge, the grille/main dining room, the market room and a private dining room.

As guests enter the lounge and bar area, they will immediately be met with a sunset glow, cast over the lounge by the sprawling 30-seat bar, nearly 50 feet in length. The menu will feature signature cocktails like Campari Spritz, and a wine list with a focus on the Campania region. The 40-seat lounge area will boast a variety of seating options fit for a casual cocktail or full meal. The grille room/main dining room area will feature towering ceilings with a wine display terraced about a high-energy open kitchen. In the evening, the room will be aglow from the streetlamp inspired hanging light fixtures.

Seating in the market room area will offer the best views of the seafood display, creating an atmosphere of being tucked away in a seaside café alongside the marketplace. The most intimate experience will be available in the private dining room or fresco room. This will offer a space for groups up to 60 to reprieve from the hustle, looking to gather for whatever the occasion calls for.

Flay’s Mesa Grill concept originated in New York City in 1991 and expanded to the Southwest to Caesars Palace in 2004. Since then, Mesa Grill has welcomed nearly three million guests and donated more than $135,000 to Three Square Food Bank, resulting in more than 400,000 meals for the Las Vegas community. Don’t miss the last chance to savor signature dishes like the Tiger Shrimp + Roasted Garlic Corn Tamale, Ancho Chile-Honey Glazed Salmon and New Mexican Spice Rubbed Pork Tenderloin.

Reservations for Mesa Grill’s final days are encouraged. Mesa Grill at Caesars Palace is open Wednesday to Sunday from 5 to 11:30 p.m., with weekend brunch of Saturday and Sunday from 10:30 a.m. to 3 p.m. For more information about Mesa Grill at Caesars Palace, visit

Dave’s Hot Chicken’s Big Move to Las Vegas Takes Place in 2021 by Bradley Martin

New fried chicken restaurants are set to dominate the fast-casual dining scene over the next six months, including the newly opened BB.Q Chicken in Silverado Ranch, the soon-to-launch North Town Chicken on Craig Road, and the currently paused arrival of Guy Fieri’s Chicken Guy! at the North Premium Outlets.

One of the most anticipated debuts on the horizon has now confirmed it is expanding to the westside, but fans of Dave’s Hot Chicken won’t be able sample its cult Nashville hot recipe until next year.

Taking over a 3,200-square-foot former Carl’s Jr. at the Canyon Lakes Plaza retail center, the rapidly growing brand was created in Los Angeles by former Bouchon chef Dave Kopushyan and is promising it will be a “few more months” before the restaurant and drive-thru land on Sahara Avenue.

Easy to spot and located across Fort Apache Road from Village Square, the steady progress can be partly attributed to an ongoing complete interior makeover, from flooring to ceiling tiles, the removal of non-load bearing walls, and remodeling the back of house area.

Once in place, diners can look forward to deep fried, spiced chicken prepared “in a proprietary brine,” served as sliders and tenders, plus sides of mac and cheese, kale slaw, and cheese fries.

Circa’s New Victory Burger & Wings Co. Brings a Sports Bar Experience Coupled With Comfort Food
    BY: Susan Stappleton

Olive burgers, waffle fries, and cereal-stuffed milkshakes arrive at a new sports bar opening inside Circa at the end of the month. Victory Burger & Wings Co. from the owners of American Coney Island at the D Las Vegas anchors the three-story screen in Circa’s sportsbook and features its own radio booth.

Co-owner Chris Sotiropoulos says the conversation about a burger restaurant started in 2017 when Circa and D Las Vegas CEO Derek Stevens sat at Long Bar and talked about what a sports bar might look like at the new resort that opens on October 28. Sotiropoulos says he grabbed a napkin at the bar and started jotting down ideas, then called his suppliers the next day to order new products to start testing dishes.

The burgers use a blend of Black Angus ground beef, short ribs, and brisket. The 8-ounce burgers grilled on a flattop come in six varieties, and diners can swap out turkey burgers, grilled chicken, or an Impossible burger for any of the combinations.

The Long Awaited Din Tai Fung Starts Serving Xiao Long Bao on the Las Vegas Strip
    BY: Susan Stappleton

Din Tai Fung, the Taiwanese restaurant specializing in xiao long bao, opens its first Las Vegas location at Aria. The restaurant replaces Aria Cafe, once known as the largest 24-hour café on the Strip.

The Shanghai-style soup dumplings feature Kurobuta pork and broth that bursts open on the first bite. Diners should drop one dumpling on a spoon with a sauce made at the table by the customer, and poke it open with chopsticks to release the soup inside before eating. The restaurant suggests combining three parts vinegar to one part soy sauce, and then adding fresh ginger to complete the dip.

“Some of our guests just can’t wait to put everything in their mouth,” says James Fu, a chef with Din Tai Fung who is in Las Vegas to train the staff. A QR code on the menu includes instructions on how to eat the soup dumplings as well.

The restaurant estimates it will make 10,000 soup dumplings daily.

The Morton Brothers Change MB Steak Into One Steakhouse When Virgin Hotels Opens

MB Steak, the former steakhouse at the Hard Rock Hotel, isn’t just going through a remodel as the resort renovates to become Virgin Hotels in early 2021, but now brothers and co-owners David and Michael Morton say the restaurant changes names to reflect the revamp.

When Virgin Hotels opens on January 15, MB Steak converts into One Steakhouse, a name that reflects the three generations, two brothers, one steakhouse idea behind the restaurant.

“Our father was the founder of Morton’s Steakhouse, which was our training grounds and we’ve been around the steak business for a long time,” Michael Morton says. “Steak is simply the one thing we do best.”

Michael Morton says that MB Steak was really built as its own entity when it opened at the Hard Rock Hotel in 2017. “We really blocked everything off from MB Steak to the casino. We not only had a wall , but we have a tunnel to go through to really bring you into our own world,” he says.

Primal Steakhouse Debuts Tomahawk Steaks on the Eastside by Bradley Martin

Launching with a debut so low key that its Boulevard Mall landlord has yet to include the restaurant in its tenant directory, Primal Steakhouse arrived on the eastside serving thick cuts of meat surrounded by an interior filled with broadswords, animal pelts, and suits of armor.

Located on Maryland Parkway inside the long shuttered Italian restaurant Mamma Olivia, executive chef Angel Lopez promises a “Central American-inspired, fine-dining experience,” at a rare full-service destination for the mall.

Citing a local resume featuring time at Elio at Wynn Las Vegas,Gordon Ramsay Hell’s Kitchen at Caesars Palace, and Sadelle’s at the Bellagio, Lopez’s steakhouse menu is paired with cocktail selections that include a bourbon-based King’s Elixir, the Prosecco and wildflower honey Queen’s Nectar, and the Viking Punch served in an ox-horn drinking cup.

Glowing with amber lighting from chandeliers and wall sconces, the masculine environment has kept the prominent bar at the front entrance, still accessible from inside the Boulevard Mall.
