Where can I find a buffet with great fall off the bone bar-B-Q ribs. I have previously read a thread which gave this info but I can't find it.
I am also wondering about the best champagne brunch that is served on Saturday (most I have seen are served on Sunday). We are traveling on a budget but on our last day before a red eye home I want to splurge.

Suggestion for Buffet with Ribs:
1- Wynn - St. Louis Ribs are excellent
2- T.I.- 3 different kinds included Smoked Ribs
Most hotels now have a Saturday AND a Sunday Brunch (usually called a "Weekend Brunch") but not 100% sure if Champagne is served. I know the Las Vegas Hilton serves wine at their brunch.

Usually i would not take a thread off topic nor give an answer that was not asked for, however I must make an exception.
The best ribs in the world, let alone Vegas, are to be had a Mr Luckys inside of the Hard Rock. I know you wanted buffet ribs, but please, I implore you to change your mind, you will not regret it.

Bellagio buffet offers a champagne option @ b'fast. Good place to splurge ---
Crave @ Mirage has ribs, as well as the Rio buffet --- you could call ahead to make sure...

The ribs at TI's buffet (Dishes) are pretty good. I don't remember them falling off the bone, but I do remember getting 3 helpings. :D Also, I think they're served at lunchtime, which is only $15, so that's not a bad price.
My favorite champagne brunch is still Bellagio, but I haven't tried Wynn yet.
Someone correct me if I'm wrong, but can't chgnlat get ribs AND champagne at Wynn's weekend brunch (maybe kill two birds with one stone :))

Is there a place where they post the general items they serve on each buffet so you know what you may get before you go?

That would be a great idea but the only place so far where you can see a list of buffet foods is at the buffet itself. I have never seen anything available beforehand.
